Gaiwan

Traditionally used in China for drinking expensive or hard-to-replace tea, Gaiwan is a handless, bowl-shaped cup with a lid and a deep saucer. A few leaves are placed in the cup, water is poured over them, and the lid is used as a filter. Sometimes, a second gaiwan functions as a teapot. Gaiwan is an ideal vessel in which to brew white and green teas. As a rule of thumb when brewing, the younger the tea leaves, the lower the water temperature should be. Leaving the lid off while brewing in a gaiwan helps prevent the leaves from becoming stewed.
